I use schroot for my dev chroot (where I work on packages) and it bind mounts my directories as expected. Looking at the wiki article for using schroot for a LP chroot, I guess you missed adding "type=directory" to your schroot.conf stanza (default is type=plain). And as Max wrote 'plain' schroots don't bind mount.
