Per upstream, this is already available as a config option: By default, Thunderbird 2.0 forwards a message as attachment, thus you should see an ".eml" attachment in the upper-right-hand corner of the composition window. This can be switched to "inline" in the Edit > Preferences > Composition > General tab, thus allowing you to edit any component of the message you are forwarding (including the addresses of previous recipients).
