ok, I have a similar one. Just upgraded from 8.10 to 9.04 the server and the client chroot, installed all ok and sound actually do this thing that you comment.
Any client play sound with any player (totem-gstreamer, vlc, mplayer, rythmbox, listen, banshee, etc..) but after a while (say 5 to 20 minutes randomly) it stop working n' show me a disabled sound icon, logout and login even whit another user does not help, the problem remains, you kill the client and reboot.... every is working fine... until a while the problem emerge again and again... I will try to clean a home user directory and try what you do, if work i will try to identify the config problem and post it.
