Ah, after going through a downgrade to 8.04 Mythbuntu, MythDora and Fedora, I went back and tried MythBuntu 9.10 again.
This time I followed advice on this page: http://www.linuxtv.org/wiki/index.php/Saa7134-alsa And I was able to get tvtime to generate sound by using arecord piped to aplay. Not totally satisfactory, but I'm convinced that my cards work right. Now to finetune it and get mythtv to work with it.
