Another quick update, an audiophile friend has suggested it may be an issue with how pulseaudio is routing my audio.
Apparently much of the main dialog comes through the centre channel on a 5.1 surround system, while the ambiance comes through the others. Mplayer appears to have surround sound disabled by default (http://www2.mplayerhq.hu/DOCS/HTML/en/advaudio-surround.html), while totem and VLC appear to support it by default.
