I will send the following email to the developers of evince, I imagine they know the most about it, and the person best qualified to fix it.
"Dear Evince Developers, I would like to point out a minor bug in Evince, and would ask if / how this bug could be addressed and fixed. It is quite annoying, and affects a common activity (copy and paste) The issue is that when you copy text from a pdf with columns in evince, the text is selected from both the columns, which makes a mess when you paste it.
