Your description of the issue doesn't appear to describe an actual problem. Stereo 2-channel output is the default; you have to explicitly select any other configuration. Have you actually tried using plug:surround51 for a 6-channel configuration? (aka ``aplay -Dplug:surround51 foo.wav'', where foo.wav is multichannel)
