Thank you for taking the time to report this bug and helping to make Ubuntu better. Unfortunately compiling the kernel yourself means we can't support it. Also both 7.04 and 7.10 are no longer supported. (It is still a bug that it broke though, but in an unsupported release).
In the current releases there are packages so that you don't have to compile xen yourself.
