You're quite right, no business should be reliant on volunteers for fixes as they may never fix the problem or take too long to do so. If you're in a position where you need someone to look at your problems straight away you can pay for professional level support, http://www.ubuntu.com/support has more information on both paid professional support from several companies and free help resources.
