I have some more information - the bug goes away when I uninstall the (Recommended) NVidia version 180 driver, and evolution works fine. The desktop is ugly and low res without it, but at least it doesn't hang every 20 minutes, as it has now been tending to do.
The problems with Evolution were clearly a red herring - the problem is with X windows, specifically the version 180 driver.
