Sebastien, I changed the title and the description of this bug to reflect what 
I sayd in gnome-bugs #572463.
I haven't yet tested the issue on jaunty, I will do it as soon as possible.

** Summary changed:

- changing keyboard layout doesn't take effect immediately
+ you cannot test, immediately, new selected layouts in the preview

** Description changed:

- If I add a new default layout from gnome-keyboard-properties the "type to 
test settings" preview doesn't show immediately the new layout (typing in it 
you see the old layout) and, in fact, you can discover this opening other apps 
(if you open text editor or terminal you will see that the old layout is still 
the default). Logging out and then logging in resolve the issue.
- No results if you press "Apply System-Wide" button inside the layouts 
properties.

- I notice that this issue happens almost all the time you select new keyboard
