Then you can do that using the "route" command. The fact is that when it is by default configured the way you want, everyone who *requires* a VPN to get any internet access at all gets NONE and thus have no way to read online explanations of how to set which applications should use which route. It would create not only a security problem but much bigger userability problems than the one you are having.
