I have the same problem with nm-applet becomes invisible without particular reason. I can't even relate it to any other action. There is empty space where nm applet stands in gnome-panel and I can get nm menus on left and right click on that empty space so it doesn't disappear but it simply becomes invisible. Aside it's invisibility it works just normal, I can switch to other networks, get connection status, etc.
Interesting is that in same time nm applet becomes invisible clock applet freezes. Time clock applet is showing freeze, aside of that it works normal as well.
