I can still open Word templates from Nautilus after I manually remove those entries. If you remove those lines from openoffice.org-common.xml, Nautilus will be fine, because it's the .desktop files that say to Nautilus what a given application can open.
MIME packages define how to recognize a given mimetype, not how to open it.
