The 'correct' way to downgrade a single package and its dependencies is "aptitude install packagename=version", eg. "aptitude install xserver- xorg-video-intel=2:2.4.1-1ubuntu10". Doing what Pablo Marchant suggested will probably end up uninstalling a lot of other stuff that you do not want to remove.
