Steve: I still wonder if it's a timing issue, i.e., if there was a subtle change in services start order or else in the time it is taking networking to completely come up? That could explain why (a) it worked in 8.04 but not in 8.10, and (b) after the boot is complete and issuing a mount command with the exact same parameters as the fstab entry it just works.
