Drew, Which version(s) of Ubuntu? Which version(s) of the nvidia driver?
I have used Intrepid (8.10) and OOov3 with the Sun presenter mode, and it works without the problem you see, although it does exhibit the problem of grabbing all workspaces instead of just the one it is on when it goes full-screen. I also do not reproduce the gksu problem you illustrate. Nor do I recall seeing these issues with Hardy (8.04) with OOoV2.4. My system is a ThinkPad T61p 6457-7WU.
