It affects my system too. Intrepid Ibex with nvidia-drivers 177 (version reccomended by the system itself). I got some improvement customising the human theme: I set controls to "human-clearlooks" instead of human. Not a good solution... and still some text disappears in Openoffice as you can see in the attached picture. Annoying :(
