While getting help for my resolution problem, I was sent a working xorg.conf file that takes care of this bug. Apparently, there's something wrong in the xorg.conf file in the upgrade to Intrepid. I have posted it to the Pastebin at: http://pastebin.ubuntu.com/65942/ You should be able to save your X settings in nvidia-settings now without the program crashing.
