If invoked with the --interactive option (or from the menus), gnome- screenshot can be set to grab the whole desktop. After that, the keyboard shortcut to grab the desktop works, but only until the shortcut to grab the window is invoked. At that point gnome-screenshot reverts to grabbing windows only.
