In retrospect i.e. following the update, user login has more to do with the problem - not the gdm restart as I originally thought ... since, once set, the login screen retains the expected resolution. In either case, xorg.conf is overwritten by the time the user session is available for use (I'll attempt to use a console login screen to see if I can narrow down when the file is overwritten).
