If you know about command lines and changing /etc/fstab, these options are listed in 'man mount' (this information is also available in the GNOME help browser). The options you need are or might be different for FAT/VFAT and NTFS, and I'm not sure what you would need for your Windows partitions (and I don't have any anymore to test on).
