Ich denke da gibt es viele Möglichkeiten. Z.B. 
https://github.com/einpraegsam/email2powermail oder das Formular per AJAX 
nachladen und den Empfänger an Hand eines GET-Parameters (z.B. fe_users.uid) 
auswählen...
