I was confused as to why "The Big Dollhouse" was cut as well, but on KCRW's The Business, Harvey Firestein indicated that "Dollhouse" originally served as the "come back from intermission" song, and in rewriting the show for TV (with no intermission", a big reestablishing number was no longer necessary. So that much, at least, can't be blamed on NBC.
