I found the issue. The problem was that I plugged my speakers in the black jack (which is meant for rear speakers in a 4+ channels configuration) instead of the green jack (which is meant for front speakers in any configuration). As the green jack hadn't anything plugged in, pipewire discarded the whole analog output. I personally would prefer to have all the outputs available for selection regardless of the jacks status but that's just the way it is.
