I found the issue.

The problem was that I plugged my speakers in the black jack (which is meant 
for rear speakers in a 4+ channels configuration) instead of the green jack 
(which is meant for front speakers in any configuration).
As the green jack hadn't anything plugged in, pipewire discarded the whole 
analog output.
I personally would prefer to have all the outputs available for selection 
regardless of the jacks status but that's just the way it is.

  wpctl status only reports my integrated audio digital output (IEC958) along 
with my HDMI audio output.

  aplay -l lists both the analog and digital output of my integrated audio and 
I can play sound just fine with aplay.
