Thanks for your report. ibus-pinyin is deprecated, and we recommend to use ibus-libpinyin (Intelligent Pinyin) instead.

The deletion of the selection behaves as if the input method pressed the backspace key for me. I can undo the text removal by using Ctrl-Z. I did not observe the same problem on the Ubuntu default English (US) input, or with IBus WuBi Jidian 86 and IBus Mozc. I use IBus Pinyin 1.5.0, Ubuntu 20.04 LTS, Kernel 5.4.0-146-generic.
