I used to help maintain the FOSS list of education software at
schoolforge.net.  The site is still up but the group is no longer
active.  May still be some helpful information on FOSS and education
there.  I also volunteer for the DFF https://digitalfreedoms.org/en/
If you or anyone else on this list would like to get their classroom
involved in hosting a local Software Freedom Day event in September, I
can connect you with resources and contacts.  I maintain several lists
of FOSS software on a variety of topics including one on FOSS
libraries for machine learning.

I've personally contributed to FOSS projects for decades.  It's
usually pretty hit or miss.  Some projects are friendly and welcome
contributions and some are cliquish and don't want input from
outsiders.  A couple of friendly FOSS forums where you can ask for
advice, find out about FOSS projects or share information on your own

While it's not primarily FOSS related, if you're interested in
cybersecurity resources, you may want to check out Nearshore Cyber.
They hold chats and discussions and they were hosting online games
like Backdoors and Breaches to learn more about cybersecurity.
Another interesting resource on FOSS might be Open Ed Tech:

offline AI related projects.
