I occasionally co-teach a course in physical computing with another professor. Lately we've been talking with TI, who seems very eager to seed a variety of technologies including, but not exclusively, Beagle boards. They seem very willing to supply a handful of hardware for faculty to evaluate, so maybe that will help those of you looking at hardware.
