I occasionally co-teach a course in physical computing with another professor.  
Lately we've been talking with TI, who seems very eager to seed a variety of 
technologies including, but not exclusively, Beagle boards.  They seem very 
willing to supply a handful of hardware for faculty to evaluate, so maybe that 
will help those of you looking at hardware.  A full list of the variety of 
platforms they've been discussing with us can be found at 
http://designsomething.org/  They've also provided us with a pico projector 
development kit.  It may be worth it to reach out to your regional TI reps
