Then why do you need to describe the tables in the schema at all? If you don't want to 
use Torque for some tables, simply don't define them. I'm probably missing some 
point... if so explain please.

Not via any of the built-in options. But it is easy enough to patch the 
Velocity templates: you could filter out the tables you want to generate 
sources for in the templates\om\Control.vm file.
