Just out of curiosity: Why would you need multiple instances running 
simultanously?

You can run as may tor instances from the command line and pass each one a 
separate config file to use as you like. (Or as your machine can handle.) You 
do have to use a distinct listener Port for each service of each instance of 
course.

Same goes for polipo.

This has nothing to do with Mac OS X in particular.
