Further investigations led me to a working configuration: 1. You have to unistall previously installed versions of the Tomcat service; failure to do this, keeps unwanted references to the old version in the system registry; 2. the file bin/service.bat from the .zip distribution fails to add the --Argument parameter that apparently the .exe distribution correctly adds to the system registry with the value of 'java'; 3. you have to be sure that the --Java parameter has the value 'java': I unconsciously left a Tomcat 4.1.x-suitable value for this parameter. My apologies for this. Again, an installation from the .exe file seems to be the best practice in order to obtain a working configuration.
