Recently, periodically one of our toasters is behaving badly; but, I do
not see any logs indicating the root cause.

Clients trying to send mail through the toaster get some kinds of
message like the subject line.

I have been on the server during one recent bout, and there is nothing
in logs.  Only thing is, in top clamd is just over 1 cpu load.

I can telnet to port 25.  On the box, there is no sluggishness.  There
is nothing unusual in the logs.  In fact, I have had a client try to
send mail during this bout, and I did NOT see the message enter qmail.

Sometimes it lasts 10 - 45 minutes.  After that, everything is normal
for days.

What do I look for?
