This is already the case:

go to Server Settings (2) and change the Server Software from "other" to
"courier" (a)

This is a good idea.  Mine is already set this way, but it should be in
the toaster.

I'll experiment with this one.  I know for example that Thunderbird
frequently asks about encoding, so it must be pretty prevalent.
