In DNS, make the server a secondary MX record (make sure you have another MX with a lower value).

Add the domain to rcpthosts or morercpthosts. If morercpthosts, run qmail-newmrh to have it rebuild morercpthosts.cdb.

That's it. Make sure the domain is NOT in locals or virtualdomains or qmail will attempt to deliver it on the "mailbag" server.
