I am afraid you can't install in UEFI mode when using PXE boot. At least that 
is my experience. Expert advice welcome.

This is a direct consequence, if you boot in BIOS mode, you don't see UEFI 
configuration. I guess the installer should be able to detect Windows, but you 
can't probably start it (you can run UEFI system from BIOS mode), so it doesn't 
populate the menu.

I think mixing UEFI and BIOS is not expected to work. But you shouldn't have 
any problem running both systems - just use your one-time boot menu your 
UEFI/BIOS provides and either start Windows, or Fedora.
