So solve this issue just add the end of 'makefile' these 2 lines (or to include relevant parts of makefile to Makefile.in and remove makefile):
uninstall uninstall-am:
make -f Makefile $@
otherwise will tesseract can not be uninstalled by 'make uninstall'.
