Or simply "rpm -qa --last".

Not sure I have any particular advice for Betsy.  I've downgraded RHEL
kernels before (mainly for issues with drivers or other kernel modules)
without much mucking about with other stuff (if you use it, maybe downgrade
perf as well, and possibly also kernel-firmware, though I didn't bother with
either of them).  But I've never run the UEK kernels, so I couldn't say
whether they have any other dependencies or gotchas.
