If it's for *you*, gpg + rsync to any always-on, always net-accessible space works well. Checkout for OpenVZ offers out there, there are hundreds of them for very cheap. I do this with all my personal docs, save them on my server and that server is backed up to a web accessible server.

However, it doesn't work for non-technical people.
