do you have the speech volume turned up too high?
the E5 has some sort of overdriven combination compressor expander at the top two clicks of volume. this isn't just Talks. If you play a podcast at max volume on the internal speaker, you would ntoice that every sound in the audio file is made to be the same volume. The speaker's breath is just as loud as his speech. It's not really loud enough to do damage to the speaker and it isn't distorted, it's just a way I think they have tried to make a sound that is quiet be more easily heard on the speaker.

I don't know if this has anything to do with what you're talking about, but if you didn't try it, turn talks down a couple of notches, try running it at a volume of around 7, and did you make sure it had 16 khz selected in the speech engine in talks? Did you try with headphones to see if it's bad with those too? I never noticed it with my E5, but I can't hear very well so I might not have anyway

As for removing Icons etc, you can change what's there. First though, I would suggest that you use horizontal icon bar, or you could turn the home screen off completely. You can find the settings for this you need in settings found from the phone's menu, where ever you may have it. I think it starts out in control panel from the factory. go to settings, home, general, personalization, standby mode. the first option is the option that says home screen theme. If this doesn't say Horrizontal icon Bar, press select and pick it. You can also turn the home screen off completely by picking none. Downa rrow off that item and you get key shortcuts. This controls what key 1 and key2 do when on the home screen. I have key1 set to contacts and key2 set to alon mp3 dictaphone. You assign the application the key would launch by pressing select on the key who's action you want to change, which causes a list of possible actions to appear that you can down arrow through until you hear what you want that key to do, at which point you can press select.

The next item below the key shortcuts is home screen shortcuts. this controls what icons display in the horrizontal area of the home screen that you can use left and right arrow to move through. You can't actually turn any of these icons off, but you can assign them to things that you would benefit from. Press select here to bring up a list of 6 items, one for each of those 6 horrizontally araged icons that you will be able to left and right arrow over on the home or stand by screen. Arrow down through the list you're on now until you hear the icon who's action you want to change and press select to bring up a long list of possible actions. Arrow down the list till you find what you want and press select. Keep on changing the 6 icons to your liking until everything is something that you would want to use from time to time. You don't need web in there because you can hold down 0 to launch web.

The only other changeable option that i can think of is email notification. It's also located in the standby mode screen in settings, same place the key shortcuts and home screen icons are in. Arrow down until you hear email notification, press select, down arrow until you hear email notification, and if it says it's on, hit select to turn it off. That is of course if you don't need that notification there.

Would you believe it, MY e5 ran long enough for me to verify all this without rebooting, lol, awesome!
