Hi! To edit the contact, just select the contact, and the talks would say call, send message etc. Press the options, and celect view details. When it shows all the details of it, again press option, and celect edit contact. That's how i do. There u go! Now u can edit the contact.

I also tried to read the edit contact card help in the Nokia E5-00 but talks was unable to read it. Could anyone explain me the step-by-step procedure to edit any contact needed?
