Hi Daniel -- definitely this one: leisure=stadium + sport=bullfighting. You might also want to use the building=stadium tag, if the stadium occupies the entire building in question (assuming it's in a building -- I'm guessing they all are but I'm not too familiar with bullfighting stadia.)
