Boxed springs like the one you show in your first photo I typically tag as a spring (natural=spring). The photo on the wiki page for natural=spring is much like the one you posted.
I usually add a direction=bearing|north|south|east|west so that my topo map rendering can show what way the spring flows out of the hill.
