Why do you say that no castle_type is documented? castle_type is well documented including good pictures (see either of the links above) and yes defensive is the subkey for a "real" castle or fortress if it is a very large stronghold. The inital situation was a little different: There was only the key historic=castle and it was commonly used for anything that looked even remotely like a castle. In order to better distinguish those objects, the castle_type subkey was introduced. Actually it is not that easy to distinguish between "real" castles and similar buildings in Europe. Many medieval castles were later converted to more comfortable living places (palaces, stately homes) but retained all or a part of their defensive buildings or only a few as decorations. In the 19th century, stately homes were built with pseudo defensive installations because it was fashionable to have a romantic touch. So if you have a scientifically precise defintion, it is likely that most mappers will tag it otherwise by their impression anyway.
