I have created a proposal for tagging extra details of postboxes. http://wiki.openstreetmap.org/wiki/Proposed_features/Extend_post_box
It includes tags for the type of postbox, number of apertures, royal cypher, type of mail accepted, opening hours, and indoor.
All of these are optional, additional tags. Some of them (eg royal cypher) may be UK specific, and not apply elsewhere in the world. Also the postbox types and mail types are currently UK specific, I don't know if there's any other types where additional values would be helpful?
