I've been trying out this style of mapping as well and have discovered that Osmarender has some bugs in how it deals with multipolygons. See this ticket: http://trac.openstreetmap.org/ticket/2685 . The only way I've been able to get multipolygons to render in osmarender is to remove all tags from the member ways. This is unfortunate as it often makes a lot of sense to tag the edge of an area as a fence, wall, cliff, coastline, stream, or other linear feature. Currently the only way to make this sort of situation show in osmarender is with two ways directly on top of each other. Personally I'd just ignore osmarender. Hopefully someone will fix the bug.
