Above and beyond the benefits of using a DVCS, using GitHub provides a place for collaboration and code review that a mailing list cannot provide. There are some things that a mailing list is still well suited for, but when you're wishing to discuss code and collaborate around code, GitHub really is amazing for that.
I would personally consider the choice of whether to use GitHub (or another code collaboration site if you must) to be a strong indicator as to whether you want to have more people involved and helping. Ryan Hiebert a lurker
