Jim, I've used VAC, but never for 7.1. Eugene used to be quite helpful, if you reach out to him.
I must admin that I largely abandoned VAC in favor of the VB-Audio cables and VoiceMeeter. VoiceMeeter comes in several versions, which support multi-channel devices. Also, Vincent Burel (author) is quite helpful. He runs a forum and answers questions via FB.
