Danny, I can't give a how-to, but this is how it works here.  I'm a
webmaster for domains hosted by a hosting service like yours. I have the
ability to turn SA on or off in my domain's
$HOME/.spamassassin/user_prefs file, and in that file I have the ability
to indicate whether or not the subject is changed.

My hosts provide a web-based interface that can be used to control the
contents of the user_prefs file. I don't use that, because my user_prefs
is much more complicated than most will want, but the capability does
exist.
