Depends on how much free RAM you have. If you set the limit too high, and your machine starts swapping, you'll see things slow to a crawl. Better to have an occasional short delay than have a short spike in email activity cause the box to thrash for a few hours.
Check "top" when you see that spamd hit the max children limit... how much free RAM do you have, or how much swap is being used at that time. Adjust -m as necessary to keep a bit of RAM free at all times.
