Not sure I understand. Reliable in what way? For this sort of setup, you might not need to edit any of the spamassassin config files.
-what is the simplest way/recommended way of moderating messages that are being recognized as spam.
The simplest possible way is deliver the mail with a rewritten subject line and let the clients filter the mail themselves. It's possible to quarantine them, though.
I do not want to delete messages...but in case a message is incorrectly filtered...I would like to have an option to forward the message/accept for delivery without losing the original format.
amavisd-new won't let you encode the message as an attachment, so you can never lose the original format.
